Sandwiches Revisited—The Vegetarian Indulgence

Vegetarian Indulgence

 

  1. Ciabatta Role
  2. 1 small avocado
  3. 3 slices of feta cheese (get the original made from goats and sheep milk)
  4. 1 poached egg

Prepare the avocado squish with fork add some salt, squeeze fresh lemon juice over it and some freshly cracked pepper

Meanwhile poach the egg

Put the avocado as base on the roll, then feta and an egg on top

This breakfast will keep you going for quite a while 🙂
