You would think I am fed up with the darn green asparagus here, but hey you have to be creative with what you can get.
Alright my latest venture in Green.
Green Asparagus Soup
Cut asparagus into 2 inch pieces, leave the heads whole
Boil in ca 500 ml salt water until soft
Take the tips out of the water
Blend the pieces with the water and add 1 tablespoon of Garlic Fresh (cream) cheese or 1 clove of fresh garlic and 1 Table Spoon of cream cheese
Freshly ground pepper (I love using the rainbow pepper grinder you can buy)
2 Spritzer lemon juice
Once all this is blended into a creamy mix
Add the asparagus tips, stir carefully with a spoon and let it simmer for a couple of minutes so the tips heat up again
Tip: Use low fat cheese instead of cream … same effect less calories
