Lamb Steaks with Rice

Lamb or mutton steaks I would usually marinade over night. Last week I just had taken the meat out at lunchtime so there is a change in the recipe.

 

1st Step

Cast Iron Frying Pan

2 Tablespoons Olive Oil

1 Glove Garlic

1 Teaspoon dry Rosmary

1 Pinch of Marjoram

Fry all this until garlic is golden brown

Take care not to burn the herbs

Take 2 lamb steaks and fry them in the pan about 2 minutes each side

meanwhile cook rice for 2 people

2nd Step Cast Iron Grittle

Put lamb steaks & some of the herbal oil in

Put into oven

Setting on grill & air fan on

Grill until done

 

3rd Step Hot Fennel-Tomato Sauce

Using the left over olive oil, garlic & herbs from the cast iron pan

Cut 1 piece of fresh Fennel

1/2 a small onion

1/2 a green chilli cut in slices

fry in until browned

add 1 cup tomato passata

(in summer  4-6 fresh tomatoes)

and fresh herbs
