Glutony Recover Soup

Feel you over-did the holidays a bit. Here is a hearty vegan soup that uses left-overs and is balm for your digestive system.

2 hand full of Brussels sprouts (I got a bag of fresh sprouts in special offer)

boil for 3-4 minutes before putting them into the soup

2 hand full of roasted veg (I had some frozen left overs)

1 carrot

2 small potatoes

1/2 or 1 small leek

1 piece of celery

1 piece from fennel bulb

1 small onion

1 glove garlic

1 piece of ginger

1 teaspoon caraway seeds

1 teaspoon rosemary

 

Fry onion + garlic + ginger + chilli

Add chopped potatoes fry for 4 minutes

Add the rest of the chopped veggies& spices

Boil for about 30 minutes & salt as appropriate

 

Serve with some Tabasco & Soy sauce or eat as is
