And now: the one! The only! My family’s most favourite ‘throw it all in a pan get stuffed and still be low calorie’ recipe—again served with the previous potatoes, or simple baked or boiled potatoes …

It is difficult to make a small amount of this recipe but it freezes well in portions. So my measurements are for 2-3 persons.

  1. 1 Tablespoon Olive oil
  2. 1 generous hand full of green beans
  3. 6-7 medium tomatoes (or 1 can of chopped tomatoes)
  4. 1 onion
  5. 1 small Zucchini (Courgette)
  6. 1 Yellow Pepper (colour is not important but I like to get as many colours as possible in it)
  7. 1 spoon full of fresh garden herbs … or try Italian Herb Mix (Basil, Oregano …)

 

Tip: If it is cheaper you can also use frozen vegetables

Fry Onion until glassy

Throw in diced pepper—fry until it gets brown roasted look

Throw in the cut or broken* (if you like you can simmer the beans for 3-4 minutes before throwing them in)

Top up with the tomatoes

Spice as you like

If you are in need for some spicy hotness throw in two chillies and some roast paprika

 

*don’t ask family wars have been started over green beans cut or broken!
