Chicken Soup

 

1 left overs from broiled chicken (all bones, skins, meat bits) at Thanksgiving I actually use the left over turkey which makes great stock as well

or

6 organic chicken legs & thighs

Put in bit pot and fill in water until the bones are covered (you can always add more water if the stock is too strong later. How much soup you get out of the chicken depends very much on the quality of the meat and if it was injected with water to add weight for selling.)

1 medium sized onion

1 red chilli

1 piece of ginger (be generous about 4cmx2cm at least)

2 gloves garlic

1 small (or 1/2 big) leek

2 carrots

2 pieces of celeriac or 2 stems of celery

3 bay leaves

10-12 black pepper corns

Salt to your taste

  • Boil this all for about 1,5 hours
  • When done and cooled down pour stock through colander
  • Freeze in portions
  • or use for further recipes
