My Aunt’s Zucchini Soup

aka Courgette Soup

makes soup for about 3 people

I love to have a heavy sourdough rye bread with my soups

 

1 small or 1/2 medium sized onion

1 clove garlic

3 zucchinis

1/2 tin of chopped tomatoes or 4 medium sized fresh tomatoes

1-2 tablespoons soy sauce

1 tablespoon rose paprika

1 tablespoon spicy paprika or 1 fresh chilli

3 tablespoons cream cheese or cream

2 tablespoon olive oil

Some Italian seasoning: basil, oregano, crash some black pepper over the soup before serving

 

cut chilli, onion, garlic and fry in olive oil until golden brown

cut zucchini into pieces and throw into the pa, fry until they become glassy

add the tomatoes and spices

let simmer for about 10 minutes

take blender and mix until you have a creamy thick mass

add about 2-3 cups of water (depending on how thick or thin you prefer your soup)

Switch heat off

Add the cream or cream cheese and blend it one more time until cream is well mixed into the soup
