Potatoes & Quark

One of our all-time favourite meals at home is potatoes and quark.

If you do not know quark: It is a little bit like yoghurt just with less fat and it is thicker and not as creamy. Some people call it cottage cheese but cottage cheese is something entirely different. If you live in the UK Morrison’s stocks it.

Potatoes and quark is not only quick, cheap, easy and healthy but it also makes use of the potatoes that are too small for peeling or as baked potatoes.

We usually count about 5 tiny—smallish potatoes

Boil them until done, serve and only peel when about to eat after boiling.

The Quark

Version 1

500 gr quark

Add 2-3 tablespoons of milk (unless you buy quark in the UK which is almost as creamy as yoghurt then this step is not necessary)

1 pinch of salt

1 tablespoon of freshly cut dill, or chives or parsley

Version 2

1-3 milk (or not)

1 pinch salt

500 gr quark

1 pinch nutmeg

1/2 small onion
