1 liter (pint) water
Tip: If you don’t like the sometimes very strong smell and taste of cauliflower, putting 2-3 tablespoons of milk into the water to boil the cauliflower in takes this edge away.
Boil the cauliflower in the water with salt until soft
Take a hand-blender and mix the cauliflower until there is a thick creamy soup
Add nutmeg (1-2 pinches)
Lemon and freshly crushed black pepper
If you like serve with a slab of sour cream or fresh yoghurt once the soup is on the plate
